After 34 years, he is taking leave prior to retiring.

- Artisan Bread and Pepe Saya Cultured Butter
- Sous Vide free range Chicken Breast, Charred Corn, Baby Spinach and Sesame Dressing
- Pork Belly Ragu - Pork Belly, San Marzano Tomatoes, Penne Pasta and Shaved Parmesan
- Cured Salmon Salad, Radish, Shaved Cucumber and Pickled Fennel
- Roasted Brussels Sprouts with Sesame Dressing
